Ready to lead the longest standing Teppanyaki restaurant in Northern Arizona?

Sakura Sushi & Teppanyaki at the Doubletree by Hilton Flagstaff is seeking a Head Sakura Teppanyaki Chef to assist in overseeing and managing the daily operations of the teppanyaki department. The ideal candidate should have previous experience in teppanyaki, strong leadership and communication skills, and a passion for providing exceptional customer service.

Responsibilities:

  • Managing the daily operations of the teppanyaki station, including food preparation, ensuring food quality, and maintaining a clean and organized workspace.
  • Ensuring that all teppanyaki operations comply with Hilton brand standards, including food quality, presentation, and service, and implement any necessary changes or improvements to meet or exceed these standards.
  • Managing and training teppanyaki chefs, ensuring all team members follow the teppanyaki checklists and maintain uniform standards. The Sakura Teppanyaki Sous Chef will assist in creating and updating these checklists, ensuring that all team members are following them.
  • Establishing and enforcing a grooming policy for teppanyaki chefs that aligns with the hotel's overall standards, and regularly communicate and reinforce the policy with the team.
  • Proactively seek and evaluate local talent to join the team as teppanyaki chefs, ensuring that the hiring process adheres to all local laws, regulations, and company policies.
  • Working closely with the Food & Beverage Manager and Executive Chef for scheduling and common goals. The Sakura Teppanyaki Sous Chef will create schedules for the teppanyaki team, ensuring adequate staffing levels during busy periods, and working with other departments to ensure smooth operations.
  • Create prep lists and maintain food cost per budget parameters. The Sakura Teppanyaki Sous Chef will be responsible for monitoring food costs and ensuring that the teppanyaki team is following recipes and portion control guidelines to minimize waste.
  • Keep recipe files and create recipe cards for new menu items. The Sakura Teppanyaki Sous Chef will be responsible for maintaining an up-to-date recipe file and creating recipe cards for new menu items as needed.
  • Work with the Food & Beverage Manager and Corporate Food & Beverage Director on training and onboarding programs. The Sakura Teppanyaki Sous Chef will assist in ensuring that all teppanyaki team members receive comprehensive training on food preparation, safety, and customer service.
  • Attend weekly hotel meetings and schedule regular department meetings. The Sakura Teppanyaki Sous Chef will be responsible for attending weekly hotel meetings and scheduling regular department meetings to ensure open communication and collaboration between departments.
  • Ensure daily pre-shift meetings are taking place with a strong emphasis on hotel occupancy and reservations. The Sakura Teppanyaki Sous Chef will be responsible for ensuring that the teppanyaki team is aware of hotel occupancy and reservations, as well as any special events or promotions that may impact business.
  • Follow Hilton EcoSure guidelines and train the team based on these guidelines. The Sakura Teppanyaki Sous Chef will be responsible for ensuring that the teppanyaki team follows Hilton EcoSure guidelines for food safety, sanitation, and environmental sustainability.
  • Keep up-to-date with Coconino County health regulations and ensure the teppanyaki team is compliant with all requirements, including maintaining a record of current health department certifications for each team member.
  • Complete month-end inventory. The Sakura Teppanyaki Sous Chef will be responsible for assisting in completing the month-end inventory for the teppanyaki station
